About the Recipe
The Spiced Masala Omelette is a beloved staple of Indian street-side breakfast culture, found sizzling on roadside tavas from bustling Mumbai chai stalls to quiet village tea shops. Unlike the classic Western omelette, this version is infused with the bold, aromatic flavours of Indian spices — turmeric for its golden hue and healing properties, red chilli for gentle heat, coriander for earthy depth, and black pepper for a warm kick. Fresh onions, tomatoes, green chillies, and coriander leaves bring crunch, juiciness, and a burst of freshness, making every bite vibrant and satisfying. In many Indian homes, the masala omelette is more than a quick meal; it’s comfort food, a go-to for busy mornings, lazy weekend brunches, or even a light dinner paired with hot chai.

Grandma's Nuska
This masala omelette isn’t just delicious, it’s a traditional nuska for kickstarting your morning metabolism. The turmeric boosts immunity, black pepper aids digestion, and fresh coriander cools the body, making it the perfect energising breakfast. Beat the eggs until frothy, it traps air, making the omelette fluffier.
